Stirring out reinterpretations of the classics, The Dolphin Hotel collaborates with Campari to open a bar featuring a drinks list of Campari like you’ve never had it before.
In an ode to aperitivo bars of Turin, The Dolphin Hotel has teamed up with Italian apéritivo, Campari to create an immersive bar-inside-a-bar named Bar Red. The pop-up bar celebrates the ritual of the aperitivo taking over The Dolphin Hotel in Surry Hills for one month only starting on Wednesday 20th September to Sunday 22nd October.
If we rewind to the golden era of The Dolphin Wine Room days of Aperitivo Hour (circa 2018), you’ll be familiar with the concept of the perfect aperitivo drink and snack at 5pm on the dot. But this is where familiarities come to a halt. The atmosphere will be steeped in red to reflect the signature negroni colour, the venue will hallmark a drinks list featuring Campari like you’ve never tasted before with the introduction of “Newgronis” making it the place to be for Negroni Month. The bespoke menu will stir out reinterpretations of the classic negroni, giving your taste buds new sensations presenting four new-takes on the classic cocktail by Bars Director Josh Reynolds, paired with a snack menu from Executive Chef, Danny Corbett.

Drinks Director, Josh Reynolds has imagined new ways to enjoy the classic Italian drink – The Negroni. Take the London Passion Week Negroni featuring Tanqueray Gin, White Campari, Suze, Unico Pomelo, clarified with Messina Passionfruit Ice Cream, the Raspberry Beret Negroni; Tanqueray Gin, Campari, Wild Raspberry Eau De Vie, Byrrh, Freeze Dried Raspberry, a Black Truffle & Cacao Husk Negroni including your standard ingredients plus Black Truffle, Martini Rosso, Cacao Husk and White Chocolate, and the Tiramisu Negroni with Mr. Black, Madeira 5yr, clarified with Messina Coffee Ice Cream.
The Original Single Serve Aperitivo, The 98ml Campari Soda in a bottle, are also on the list alongside a Wild Strawberry Americano, a Maple Leaf Boulevardier, a Peach and Grapefruit Spritz, and finally a tight selection of Amari.

Seasonality, breaking boundaries, tongue in cheek serves, blending Italian stalwarts like the tiramisu dessert and reimagining those flavours in a negroni with great technique, and lastly, drinking should be fun, a time to unwind. There’s more fun when it comes to the menu with Executive Chef Danny Corbett presenting a snacks menu inspired by the kitchens of Northern Italy. With all dishes designed to be eaten with a Campari in hand – a guest appearance from the Fritto Misto care of the Menzies Bar Shell House menu and introducing the Tramezzino; Lamb shoulder, Verde Sauce, or go with the classic Spaghettini Carbonara for something to twirl your fork around.

Soundtracking Bar Red will be a suite of some of Sydney’s finest curators, featuring a playlist by Sydney DJ Kali aka Carly Roberts.
