It’s Scout: a bar within a bar, and it’s now open.
Matt Whiley, one of the world’s most celebrated mixologists, constantly evolves the drinks list for the antipodean version of his award-winning Scout bar London.
Scout has taken up permanent residence on level two (top floor) bar of The Dolphin Hotel in Surry Hills. While the bar is a solo entity, with its own entrance and unique design, Whiley is supported by Maurice Terzini and his team in bringing his unique approach to bars and drinks to Australia.
We always welcome walk-ins, if you would like to book a table, our bookings are for 2 hour slots if you would like a longer slot, email us and we will do our best to accommodate.
