We’re welcoming Nic Wong to the Dolphin Hotel fam in true Bottlenose Bro style, a Delfino Aperitivo snack sesh with the unholy yuzu spritz water baptism.
Nic will be taking up residence at Icebergs Dining Room & Bar, Ciccia Bella and The Dolphin Hotel, lending his experience gained from some legendary Sydney establishments such as Rockpool, Billy Kwong, Ester, The Apollo, and more recently Cho Cho San.
Having spent the good part of 18 months in Japan, Nic’s food is an Oz-modern rockstar spin on Tokyo Izakaya dens, and quite frankly – we can’t wait to see what fresh snacks he plates up in the gravel pit kitchen. You can almost guarantee there will be some saké and yuzu drinks to gulp on.
